Freixenet is the world’s largest sparkling wine producer. Based in San Sadurní d’Anoia, this Cava house began as a small family company in 1889, founded by Pedro Ferrer Bosch and his wife Dolores Sala Vivé. The name comes from their family estate, La Freixenada (meaning ash tree) and although Freixenet has grown since it’s beginning into a world class operation, it is still a family owned company. Oyster Risotto

INGREDIENTS

9 oz mushrooms, sliced - olive oil - 10 oz prawns, peeled - 1-1/2 cups Freixenet Cordon - Negro Brut - garlic powder - black pepper and salt - parmesan cheese - parsley, chopped
onion, chopped - diced tomato, diced - 1 cup whipping cream - 16 oz spaghetti

  • 1. Season mushrooms with salt and pepper and sauté in olive oil until cooked. Remove from pan.
  • 2. Place prawns, Cordon Negro Brut, garlic powder, salt and pepper into pan. Cook prawns until liquid starts to boil and then remove. Add the chopped onion and tomato and simmer until the liquid has been reduced by over half (about 8-10 minutes).
  • 3. Pour the cream while stirring continuously and cook for two minutes, until the mixture has thickened slightly and the quality has been reduced.
  • 4. Add the prawns and mushrooms then season to taste with salt and pepper.
  • 5. Serve immediately with a pinch of dill or basil, for garnish.
