Freixenet is the world’s largest sparkling wine producer. Based in San Sadurní d’Anoia, this Cava house began as a small family company in 1889, founded by Pedro Ferrer Bosch and his wife Dolores Sala Vivé. The name comes from their family estate, La Freixenada (meaning ash tree) and although Freixenet has grown since it’s beginning into a world class operation, it is still a family owned company. Pale strawberry colour, extremely bright and vibrant. Long firm mousse. Soft summer fruit aromas on the initial nose, rounding into complex, rich concentration, with great elegance. The palate is full but soft, again summer fruits dominating.

Three Cheese Fondue

Cooking Time: 00 hrs 30 mins (approx.)

4 tsp cornstarch - 1 tbsp fresh lemon juice - 1 1/4 cup Cordon Negro Brut sparkling wine - 1 large shallot, chopped - 2 cups coarsely grated Gruyere cheese - 1 1/3 cups grated Swiss cheese - 3 oz Camembert cheese, or soft cow's milk cheese - generous pinch of ground nutmeg - pinch of ground pepper - baquette, cubed

  • 1. Stir cornstarch and lemon juice in small bowl until cornstarch dissolves; set aside. Combine wine and shallot in a fondue pot or heavy medium saucepan; simmer over medium heat for 2 minutes. Remove pot from heat.
  • 2. Add all cheeses and stir to combine. Stir in cornstarch mixture. Return fondue pot to medium heat, and stir until cheeses are melted and smooth. Continue heating until the fondue thickens and boils, about 12 minutes.
  • 3. Season fondue with nutmeg and pepper. Place over candle or canned heat burner to keep warm. Serve with bread cubes.
