1 small squid, cleaned, skin removed, opened flat, flesh lightly scored with the tip of a knife
2 tbsp olive oil
1 garlic clove, crushed
½ lemon, juice only
small bunch rocket
1. Heat a griddle pan.
2. Cook the squid on the griddle for four minutes, or until the flesh is marked with golden-brown stripes, turning it over halfway through.
3. For the salad, mix the olive oil, crushed garlic and lemon juice in a bowl.
4. Add the rocket and mix with the dressing.
5. To serve, place the salad on a plate and put the chargrilled squid on top.
